LAMP, XAMPP for production

Every LAMP or XAMPP entry or tutorial that I see says “Not for use in production,” so what do I use for production?

you use apache, php and mysql as they should be for production. xampp - all these things in one package, mostly without security settings. The root passwords are empty .. users are well known .. but the components are the same as the ones you would use if you downloaded them each.
