How do I create an iPhone project in Xcode that indicates when I create the project the version of the SDK that I want to use?

When using the latest version of Xcode and the SDK 3.0, when creating a new project, iPhone Xcode creates the SDK 3.0 project. If I want to return to SDK 2.2.1 after creating the project, I need to change something in the generated source code files, as some of the APIs have changed. Is there an easy way to specify when creating an SDK project that I want to use explicitly?
