Is typical or atypical Content-Type negotiation in REST applications?

I feel that Content-Type matching is one of the “things to do" for REST, but most of the frameworks, tools, and punt applications on it do not know how much I know.

What REST programming frameworks support content type matching?

Should I expect it to be useful? Will it be distributed as part of REST? Do applications really provide multiple formats for the same resource? Or are they? Is there a good reason to deliver multiple formats for a resource?
