My question is more about learning the user interface skillset for iPhone dev.
I have noticed many iPhone developers who create a great iPhone app, and when I say "excellent" I mean amazing interfaces. I want to be able to create similar interfaces, but it's hard for me to figure out how to do this.
I took a few books for the iPhone, but they all show you how to use the existing user interface elements provided by Apple without customization.
Can anyone here help me find the resources and help me develop the skill set needed to create these amazing interface interfaces?

You might want to check out Apress' iPhone UI Projects . I have not read it, so I will not vouch for it, but it is highly appreciated and seems to be exactly what you are looking for.
