ejabberd does not process audio / video natively. Audio and video are processed through Jingle (XEP-0166), which is a client for the client.
If you want to place audio or video calls, you must ensure that both clients support Jingle through the usual serivce search tools (see section 11 of XEP-0166). These are not many customers, but Psi at least supports it in later builds.
