Do I really need a Mac to create simple, simple iPad apps? Is there any work around? Cool IDE?

Yes, you need an Intel-based Mac for development for the iPhone / iPad if you want to do this using your own SDK.

There are workarounds, some of which are listed here , but they may not be suitable for use with the latest version of iPhone OS, since they will soon ban almost anything that does not use the native SDK

It would not be easy to develop an iPhone / iPad application on Windows. You will need to install OSX86 on your computer or run a virtual OSX installation through vmware, if possible. Apple has incredibly limited access to software and app store endorsement, so you may need to test hard and release your app later. For these reasons and more, I am moving on to Android development.
