I have an application that serves incoming mail, and I have deployed a new development version for Google App Engine. Currently, the previous version is installed by default.
Can I specify that incoming mail should be delivered in a specific version?

No, this is not currently supported. You could write code for your default version, which sends mail to other versions via URLFetch.
