What are cookies and why are they useful?

Some EuroPython presentations mentioned "signed cookies." Since googling didn’t help - I didn’t find anything except “yes, they are cool, that's how you do it”, most in the context of Django - maybe someone from StackOverflow has a good explanation for me.

So what are signed cookies, why do I want to use them, how does this happen?

Signed cookies provide a mechanism in which you can trust data in cookies from the client.

Depths - this is something that you will not necessarily store session information on your server.
