What is the best way to create Microsoft OOXML (docx) from a Ruby on Rails application?

I assume it does not use ruby.

We are currently using gt rtf (http://rubygems.org/gems/rtf) to create a document that can be executed from Microsoft Word. The document includes several types of headings, tables, and several images.

but the RTF extensions we use to create tables and images are specific to MSWord. Using OOXML, we are improving compatibility with Word and other applications. Unfortunately, ODS is not an option, as there is an intention to use the ooxml-based iPad editor.

In addition, it should be noted that this will not be served from the Windows host, and therefore the corresponding win32 / .net libraries are not available.

I agree with Michael, but after this question was asked, I had to implement it myself and wrote down some notes that might help
