How to change the default FireMonkey style in Delphi XE2

I saw a video on YouTube (I don’t remember which one) when a user changed a setting in Delphi XE2 to change the default style for the entire FireMonkey application. After a big hunt, I can’t find an option.

The Insight IDE for "style" shows me "Default style - custom styles (forms)" in the "Project Settings" section. But, if I'm not particularly fat, there is no such option.

VCL styles and Firemonkey styles are fundamentally different.

Because of this, I am not sure that they should have used the same name.
