Element of the central panel Xcode / iTunes / Instruments; what is it called and how to create it?

I would like to create a toolbar element, for example, a central element that can be seen in Xcode / iTune / Instruments / etc:

central toolbar item

Can someone tell me what he called and how to start creating your own?

Also, will I encounter problems getting my Apple approved app when I ship it to the Mac App Store to mimic Apple’s native apps too much?

Finally I implemented a solution:

ITunes or Xcode style info window at the top of the window

Here are the initial results:

This is interesting because they seem to be consistent with the idea I used to implement this: turn off shortcuts and give to all your custom views where the normal elements actually have hand-drawn labels. Obviously, this will be a lot of work, but it gives you enough freedom to effectively complete objects of full height.

The best part is that unlike the hack view / window, which Xcode apparently uses, you still have a custom toolbar with draggable items.
