Is there a keyboard shortcut to add a highlighted variable for viewing in the VS IDE? It takes a little time to right-click and select the "Add to View" option in the very long drop-down menu and its annoying.

Not by default.
You can add one: Tools | Options | Wednesday | Keyboard and type "look" in the "show commands ..." field. You will need the Debug.AddWatch command.
Go to the menu: Tools β Options β Environment β Keyboarda search for βwatchβ and Debug.Addwatch will be detected. Add the assigned shortcut.
You can simply select and drag the variable into the viewport.
