Version numbers in open source products are always complex. You can say that Red5 has not released 1.0. Or you could say that they had 5 major release versions. From the Wiki ; where are the five "final" releases.
With commercial software, a business often arises to get to 1.0 [done or not]; however, open source software does not exert such pressure. That this is an active project is enough for most people.
For specific examples, I was sure that Ribbit used Red5 in the backend; but I donβt know how you [or I] would check it.
Red5 is well regarded in the community as an actual alternative to Flash Media Server. I would download it and test it for your specific use case.
