Can I transfer a signature from iPhone to a .xls file using a cable (USB)?

Thus, this may not be exactly what you are looking for, but here is how I capture the signature drawn by the user (using a finger / stylus). Your UIImageView will have a painted caption. I did not think about how to transfer the signature image to .xls, but you can save the image in the device’s photo library, and then export it like any other image, and then put it in .xls (I know that the manual will process) .
