What is the best xmpp server and most common clients?

For developers:

Server: ejabberd is an interactive and powerful XMPP server.

Client: recently released 0.5 version of libjingle , which supports ringing (XMPP extensions XEP-0166 and 0167), gingle (google jingle for audio and video) and hybrid (libjingle and jingle)

XMPP: ejabberd servers seem to have the most traction at the moment. Some people may say that if you do not know Erlang, you should not use it. I would say that not many people who use Apache even know about C!

As for customers, it is wide. Pidgin and its various flavors (Adium on Mac OS X) are quite popular.

Pidgen is probably the most common customer. As for the server, I would go with OpenFire: http://www.igniterealtime.org/projects/openfire/index.jsp
