I create a custom Google map using the official Style Creation Wizard .
However, it is not possible to change the font family of shortcuts ( Arial ).

Answer: this is not possible. The best thing you can do is turn off all Google Maps shortcuts and use custom overlays.
In addition, create your own tiles using Cloudmade or TileMill.
