How do Skype or Hamachi connect users with symmetric NAT?

I know p2p applications use hole punching for asymmetric NAT, but how do Skype or Hamachi connect users with symmetric NAT?

Firstly, the problem exists only if both users are behind symmetric NAT, if one of them has symmetric and the other port is limited. In both cases, it is not possible to establish peer-to-peer communication between them. But if one user is symmetrical and the other is a full cone, then the problem does not arise.
