Why did Gmail reject our emails as non-compliant with RFC 2822?

We use Mailgun to send emails, and I recently noticed that a large number of emails are rejected per day by Gmail.

Here is the type of message we receive:

5.7.1 [184.173.153.6      11] Our system has detected that this message is
5.7.1 not RFC 2822 compliant. To reduce the amount of spam sent to Gmail,  
5.7.1 this message has been blocked. Please review

RFC 2822 spec is a massive document, so I didn’t read it in front of me, and I looked at resources on the Internet, our letters do not fall into any of the common errors that could cause this type of response from Gmail.

Here is an example email header:
