It installs under /Users/<username>/bin/Sencha/Cmd/<version>/and does not remove previous versions from the directory Cmd, which by the sound of your message means that you will probably have previous 5.x available .
Typically, the installation adds the following lines to your file ~/.bashrcthat you want to double-check, and make sure that the version in the shell path matches the old version that you want to use:
export SENCHA_CMD_3_0_0="/Users/<username>/bin/Sencha/Cmd/5.x.x.x"
export PATH=/Users/<username>/bin/Sencha/Cmd/5.x.x.x:$PATH
However, I noticed with Sencha 6 that a symbolic link with a name senchawas introduced into the directory ~/bin/Sencha/Cmd- presumably to avoid contamination of your bash configuration in future versions. You may need to rename or delete this to avoid conflict.
Finally, reinstall / restart the terminal window.
