Can I stop some fields in a document from being included in replication in CouchDB?

Scenario: perhaps certain fields are sensitive and should not be sent through ie, information related to the account - can they be excluded or should they be stored in a separate document?

No, It is Immpossible.

You can perform filtered replication to replicate only specific documents, and this is a very common mechanism used to ensure that replication to a user / client includes only the documents you want to include, but filtered replication is just a boolean for the entire document.
