Any reason not to do 301 on favicon.ico, apple-touch-icon and robots.txt?

I would like to redirect requests for these resources to my CDN. Is there any reason not to do this?

The only reason I can think of is because the services that use them may not follow the redirection - they may not be transparent to them, they may have to actively do this, depending on their implementation.

The only way to find out is to try and check your intended use cases - make browsers have them too, which happens when you add a test site as a shortcut to a mobile device, etc.
