Note A complete list of detailed steps with photos is available here: http://www.mihalick.us/how-to-highlight-text-in-yellow-using-apple-mail/

The following is a brief description of the steps:

  • Get the highlighted text in your chosen method. I wrote a letter in MS Outlook on Windows, selected the text and sent this letter to one of my accounts in Apple Mail. You can also simply copy the selected highlighted yellow text from a website page (use this page if you don’t have any convenient) by dragging the text with your mouse and copying to the clipboard.
  • I copied the text from this letter (or the selected text above in step 1), and then pasted it into a new document in the Apple TextEdit application.
  • Then, in my TextEdit document, I selected the text with the cursor, right-clicked and selected "Font | Styles ..."
  • In the pop-up menu, click "Add to Favorites" and then give your style a name. For example, "Highlighted Yellow." I have not tested any option to include a font or ruler.
  • Click Add. The new highlighting style is now saved and can be used in Apple Mail with the following steps ...

Using style in Apple Mail

  • When you compose a message in Apple Mail, simply use the cursor to select the text whose background you want to highlight. Then right-click and select "Font | Styles ..."
  • Make sure the "Favorite styles" option is selected, and then select the new style "Highlighted yellow" (or its name) from the drop-down list.
  • Click "Apply" and voila!

On macOS High Sierra (version 10.13), this is now quite simple. In Mail.app:

First open the toolbar if it is not already on. This can be enabled by clicking the toolbar with the letter "A" in the upper right corner of the creation window. By doing this, you can:

  1. Select the text you want to highlight
  2. Click the Text Background Color icon. This is shown as a small β€œa” with a red diagonal line.
  3. Select a highlight color.

That’s all there really is.
