Tasks are set by the user for scheduled tasks (procedures, emails, etc. can be stored).

Service plans are used to optimize the database.

From MSDN:

Maintenance plans create a workflow of tasks necessary to ensure database optimization, backups are regularly created and do not contain inconsistencies.

A service plan can use tasks as part of the workflow.

Work may be part of a service plan.

A service plan is a graphical interface that can create one or more SQL jobs to support one or more databases on your server.

If you want to perform scheduled maintenance of the database, use the Maintenance Plan. If you want to perform some custom action, for example, clearing the session table, create your own task.

In most cases, there is no need to create your own Maintenance Work, and the graphical interface does a good job.
