Take a look at this forum . There is some source code there to get you started, but be careful using it directly - the original author had problems compiling it.

Start by finding circles - see cvHoughCircles - a tip, eyes have a series of concentric circles.

OpenCV has a face recognition module that uses Haar Cascade. You can use the same method to detect Iris. You collect some iris images and make them both positive and non-iris images as negative. Use the Haar training module for training.

Quick and dirty eye detection first with the Haar filter, there are good model XML files that come with opencv 2.4.2. Then you will find some skin detection (in the HSV space, not in the rgb space) to identify the middle eye area or circle search.
In addition, histogram-based projections can be used after cropping the eye area.
