Can I use the Apple SearchKit indexing infrastructure in iOS, or is it just Mac OS? And can someone point me in the direction of some lessons in order to connect to iOS?

As mentioned in Search Engine Programming Guide , Search Kit is only available for OS X, not iOS. There is no API for Spotlight on iOS yet.
