MariaDB sets the time zone in the configuration

How to set server time zone in MariaDB configuration?

The only thing I can find in the documentation is to use command line flags that I don't want to do.

default_time_zone , which runs on vanilla MySQL, is not recognized by MariaDB.

This is default-time-zone ( - instead of _ ):

 [server] default-time-zone=UTC

Pasha had the right idea. "UTC" did not work, but "+00: 00" did.
