I am also new to java and Seam, and I'm trying to make a pretty ambitious site!
I agree that the learning curve for this technology is steep if you are not already a Java programmer.
I agree with the comment on its destruction. Here is what helped me:
Seam in action - I can't read a book like this cover, but I read and re-read some of the first chapters and found it useful.
Start with seam-gen from the command line and the main text editor. I ended up getting a seam app that started in an eclipse, but it's not as easy as some you might believe, and for me it was just another hurdle to overcome. I am using simply mysql database as my backend with three objects. Steps

In addition, since Seam knits JSF and EJB3, the next step is to learn each one.
I am doing a pretty good JSF tutorial right now online. At http://learn.exadel.com/
If you already know Java, you can probably pretty easily learn EJB3.
If you don't know Java, start by introducing you to the Java class at www.javapassion.com.
I still experience a frequent impact head against incidents on the wall, but it gets better.
