Is there a way to automatically synchronize my basic data model with the server (preferably REST)?

Apple has shared its Sync service infrastructure, which is documented here:

As for which data transfer style is used, I’m not sure if it uses REST, I don’t see it immediately obvious.

Typically, data sent to and from REST services does not include blobs or complex data structures. If REST is a requirement, you may need to do something custom, but when searching through the available documentation, you can find everything you're looking for.
