How to disable automatic "Updating Maven dependencies" after saving pom.xml in Eclipse IDE with m2eclipse plugin?

You can not. But why do you want to do this? Keeping the project path in sync with pom is good.

Window → Settings → Maven → enable standalone option

You can edit the "Goals to run when updating the project configuration" in the window> Settings> Maven. The default value is "process-resources", try deleting it.
